
Summer Crunch Salad
Indulge in a culinary delight crafted from the bountiful harvest of my workplace rooftop garden. Introducing my latest creation: a refreshing cucumber and zucchini salad, accompanied by a tantalizing homemade dressing of plain yogurt and mascarpone cheese. Each bite is a celebration of summer and the farm-to-table experience, where the crispness of the cucumbers and the delicate texture of the zucchinis are elevated by the velvety richness of the dressing.
Dressing Recipe:
1/3 cup of plain yogurt
1/3 cup of mascarpone cheese
1/4 teaspoon of salt
2 tablespoons extra virgin olive oil
1 garlic clove
Juice of half a lime or lemon to your preference rind of half zucchini for color
Add everything to a food processor or use an immersion blender
Salad Ingredients:
1medium sized zucchini diced
1 medium sized itachi white cucumber diced
1 medium sized green cucumber diced
2 stalks of celery diced, I like the use the center ones which are more tender and lighter in color
About 20 mint leaves
About 20 celery leaves
A small bunch of dill
